Ingredients
1 cup almonds
1 tsp. ground cinnamon
1 tsp. ground nutmeg
⅛ tsp. salt
15 dates, pitted
1 cup grated carrots
1 cup unsweetened shredded coconut
Directions
Place almonds and spices in large food processor. Pulse several times until finely chopped. Add dates and pulse until the mixture begins to stick together. Add carrots and coconut, and pulse until well mixed and sticky.
Roll mixture into 1½-inch bites. Store in refrigerator for up to one week.
Makes 20 energy bites
